Kale and Cheddar Bubble Squeak (contains dairy)
Ingredients:
Kale - a leafy green packed with lutein and zeaxanthin, natural nutrients thought to support eye health
Potatoes - provide vitamin C and potassium
Mature Cheddar Cheese - Adds flavour and a bit of calcium.
Onions and Garlic for extra taste
Preparation:
Boil potatoes until tender, then mash. Sauté onions, garlic, and kale until the kale is wilted. Mix the sautéed vegetables with the mashed potatoes, form patties, and pan-fry until golden on both sides. Sprinkle with grated cheddar and serve warm.
Smoked Mackerel and Beetroot Salad
Ingredients:
Smoked Mackerel - rich in omega-3 fatty acids, supporting healthy brain, heart and vision
Beetroot - full of beneficial antioxidant vitamins and minerals such as nitrates, lutein and beta-carotene, which are thoughts to benefit eye health, boost immunity, reduce inflammation and may help to lower blood pressure
Mixed salad leaves - include spinach or rocket for an extra boost of vitamins
Horseradish sauce and olive oil for dressing
Preparation:
Arrange mixed salad leaves on a plate. Top with flakes of smoked mackerel and slices of cooked beetroot. Whisk together horseradish sauce and olive oil, then drizzle over the salad. This dish is a delicious way to enjoy eye-healthy nutrients.
Carrot and Coriander Soup
Ingredients:
Carrots - a fantastic source of beta-carotene, important for eye health
Fresh coriander - adds a burst of flavour and a bit of vitamin C
Onions, vegetable stock, and seasoning for the base
Preparation:
Sauté onions until translucent, add chopped carrots, and cook briefly. Pour in vegetable stock and bring to a boil. Simmer until carrots are tender. Add fresh coriander, blend until smooth, and season to taste. This warming soup is perfect for a rainy day.
